The Story

Jerky is a staple in my life.  A batch of jerky will last no longer that 24 hours before we hit the bottom of the box.  Being a hunter, there are always cuts of meet where you either have left over or as with me, tired of grinding or stewing scraps, I turn to jerky for my go to utilization.  For me, this is one of the best coffee bourbon jerky recipe.  This is one of my goto recipes when I have some venison, elk, and beef or boar laying around.  The coffee and bourbon complements any type of protein, especially elk and boar.  

Ingredients and Prep

5-7 People

Ingredients

2 pounds of Venison sliced thinly with the grain

2 cup of french roast coffee (room temperature)

3/4 Cup Soy Sauce

1/2 cup bourbon

1 teaspoon red pepper flakes

1 teaspoon black pepper

1 teaspoon sea salt

Cooking Instructions

  1. Mixed the thinly sliced venison with all the above ingredients in a zip lock bag.
  2. Refrigerate the mixture of 24-36 hours.  The longer you allow the mixture to site, the stronger the coffee and bourbon flavor.
  3. Put in your smoker or dehydrator until the jerky is dry but still flexible (see below of smoking tips).
  4. Immediately place in a airtight container and enjoy.
